“Made by François Millet of Chambolle. Chardonnay from Kopuwai Delta Vineyard in Pisa, mostly clone 15, which doesn’t flower well very often. Six barrels – meant to be 24! 15% new oak. Pressings and free run blended and settled overnight. Ambient-yeast ferment which may take two weeks to start. No SO2 and then racked in February."

This is aided by a 1 hour decant, for the powerful fruit, alyssum flower / slight honey notes, beeswax all to open; and all of this even after 4 rackings and 28 months in barrels. This is seriously great. - Randall
